The “best” smoker depends entirely on how much involvement you want in the process. Pellet grills are the easiest — load pellets, set temperature, walk away. Electric smokers are even simpler but cap your max temperature. Charcoal and offset smokers give the most control and best smoke flavor but require more attention and skill.
What Beginners Often Get Wrong
- Over-smoking: More smoke is not better. Thin blue smoke is ideal; thick white smoke = bitter meat.
- Opening the lid: Every peek drops your temperature and adds cook time. Trust the thermometer.
- Skipping the stall: Brisket and pork shoulder hit an internal temperature plateau (around 165°F) that can last hours. Don’t panic — wrap in butcher paper and push through.
